Though Stephen’s birthday was a few days ago, we had our family party today.
Last week, Stephen had a small pre-celebration of his birthday at my mother’s house. There, she treated him to a Black Forest Cake.
It was a hit.
Though for months he has been planning to have a chocolate-vanilla marble cake for birthday party, yesterday he told me he changed his mind. Instead, he wanted some more of that Black Forest Cake my mother made.
I called my mom and was happy to discover that the cake was delightfully easy to assemble. Semi-homemade at its finest. Here’s all you do:
Bake a devil’s food cake mix as directed in a 9x13-inch pan. When it’s done baking, remove the cake from the oven and use the end of a wooden spoon to poke some holes across the top. Mix together one can of cherry pie filling with 1 teaspoon of almond extract. Then, while the cake is still warm, pour the cherry mixture evenly over the top, allowing it to absorb.
Prepare one package of instant vanilla pudding as directed on the box. Mix the pudding with a thawed 8-ounce container of frozen whipped topping and 2 teaspoons of vanilla. Once the cake is cooled, frost with the pudding mixture and decorate with chocolate sprinkles if desired. Chill until ready to serve.
It’s not health food. It’s not snob food. It’s party food. And around here today, it was pretty darn popular.

I love this recipe! I’ve made it twice before already—for my husband’s work potluck and for my son’s 2nd birthday party. It was a hit both times!
I did notice, though, that I only needed 1/2 of the pudding/cool whip mixture to top the cake. Did that happen to you too? Not that my kids minded having the extra around. I ended up serving it w/graham crackers and strawberries.

We did have extra topping, but I ... ahem! ... just dumped it on the cake. My husband said I was nuts, but the kids had no complaints.

I used to make a variation of this cake by simply stirring the pie filling and almond extract into the cake mix along with the oil and water and eggs, then bake it according to package directions.
I’d always bake it in two round cake pans, then use real whipping cream (whipped, slightly sweetened) between and on top. Chocolate shavings over all. A little fancier ... but the real cream really makes a nice touch.
